4 oz plain flour
A pinch of salt
2 large eggs
7 fl oz milk
3 fl oz water
2 tablespoons of melted butter
A little extra butter for cooking the pancakes.
Sieve the flour. Add the eggs. Whisk – an electric whisk is easiest. Add the milk and water. Keep whisking. Add the melted butter.
A seven inch frying pan is ideal. Add some butter and get the pan hot then turn down the heat to medium. About two tablespoons of batter is about right for a pancake.
Flip them if you want to.
Serve with your topping of choice.
