4oz caster sugar
1 large egg, beaten
The grated rind of an orange
The grated rind of a lemon
8oz plain flour
2 level teaspoons baking powder
4 medium bananas, peeled
2oz walnuts, roughly chopped
A loaf tin, measuring 3 1/2 by 7 1/2 inches at the bottom, greased.
Line the base with greased greaseproof paper.
Preheat the oven to gas mark 4 or 180C.
Place the butter, sugar and beaten egg in a large mixing bowl and sift in the flour and baking powder.
In another bowl, slice the bananas and mash them to a pulp with a fork.
Use an electric mixer to combine the first bowl. Add the orange and lemon rinds. Add the mashed banana and chopped walnuts. Keep whisking.
Now transfer the mixture to the prepared tin and level off the top.
Bake in the centre of the oven for 50-55 minutes.
Leave to cool in the tin for ten minutes before turning out onto a wire cooling tray.
This is excellent rowing food and great for picnics.
